Tagliatelle Bolognese

Tagliatelle alla Bolognese is a dish that I like to make especially for Sunday lunch or dinner
A classic of the Italian cuisine this great recipe is the best I have ever tried!

Every 6 people

  • 500g of tagliatelle
  • 250g of minced beef
  • onion (peeled and finely
    chopped)
  • 1 medium carrot (peeled and
    finely chopped)
  • 1 stick of celery (washed and
    finely chopped)
  • 2 tomatoes passata of 500g
    each
  • 4 leaves of basil
  • white or red wine (optional)
  • salt
  • pepper
  • extra virgin oil





In a food mixer put the onion, the celery and the carrot to chop them even thinner (do not mash them!).
Cover the base of a pan with oil and add the chopped vegetables, let them cook until they become more soft.
At this point add the minced beef and mash it with a wooden spoon.
When the mince becomes brown add few drizzles of wine and let all cook a few more minutes.
Add now the two tomatoes passata and the basil adjust with salt and pepper to your taste.
Let this sauce cook until has thickened up, remember to stir it every few minutes.
Boil the Tagliatelle in salted water and when ready drain and mix them immediately with the sauce.
Serve immediately.
