Ricotta and Spinach Rustic Pizza

A tasty alternative to the classic ricotta rustic pizza. Very easy and quick to make this delicacy will be without doubt appreciate by your friends and family.
Also in this case, once made it let it cool down then cut it in thin slices or cubes and serve to your guests before sitting at the table.
Like for the classic ricotta pizza I like to prepare this recipe also as main dish for my children’s tea, because it is an easy way to make them eating vegetable!

  • 1 puff pastry sheet
  • 250g of ricotta cheese
  • 60g of spinach
  • 2 eggs
  • Salt

Boil the spinach for ten minutes and drain them well.
Roll out the pastry on a baking pan and create an edge at the sides.
Prick the pastry with a fork. In a food processor mix the ricotta, the spinach and the eggs until nice and creamy and adjust with salt.
Pour this ricotta cream in the baking pan and cook it in a preheated oven at 180° for about 30 minutes or until golden brown.
