This dish is one of my daughter's favourites. It is really delicious and quick to prepare. The original recipe was given to me by my mother but I had to make few changes to arrange it to my children taste!
Every 2 people
- 200g. of Linguine pasta
- 1 tin of plum tomatoes
- 80g of pitted Kalamata olives
- extra virgin olive Oil
- 1 clove of garlic (peeled)
- 4 leaves of basil
In a frying pan brown the garlic in 2 tablespoons of oil and then remove it.
Add the plum tomatoes; it is better if you previously make them smother with the help of a mixer.
Add straight away the olives previously washed,2 pinches of salt and the basil.
Stir every few minutes.
Leave the sauce cooking until it becomes thicker.
Boil the Linguine in salted water and when ready drain and mix them immediately with the sauce.
As I said before my mother gave me this recipe and originally it wanted the addition of washed salted Capers. Unfortunately my children do not like them and anyway it is quite difficult to find them in England.
