Chicken with Peppers
This chicken with peppers is a very tempting and tasty dish and one of my husbandís favorites!
Easy to prepare I am sure it will be much appreciated also by your children and family.
Every 4- 6 people
- 1 kg of chicken drumsticks
- 2 peppers(diced)
- 1 clove of garlic (peeled)
- 1 can of plum tomatoes
- extra virgin olive oil
- salt and pepper
In a frying pan fry the garlic in 4 table spoons of olive oil.
When golden brown remove it and add the chicken togheter with the diced peppers and let them brown thoroughly.
Make the plum tomatoes smoother with the help of a food mixer (or just squash them)add them to the chicken and cover.
Adjust with salt and pepper to your taste.
Cook at low heat for 30 - 40 minutes,remember to turn the chicken at least once and add a bit of water if the chicken seems too dry.
