Chicken with olives
This chicken with olives, is incredibly easy to make and absolutely delicious.
Try this recipe and you will have a great dish with little work!
- 1 kg of chicken drumsticks or thighs
- 180g of kalamata olives (pitted)
- 1 clove of garlic (peeled)
- 1 can of tomato plums
- Extra virgin olive oil
- Salt and pepper
In a frying pan fry the garlic in 4 table spoons of olive oil.
When golden brown remove it, add the chicken and let it brown thoroughly.
Make the plum tomatoes smoother with the help of a food mixer (or just squash them) add them to the chicken together with the olives and cover.
Adjust with salt and pepper to your taste.
Cook at low heat for 30 - 40 minutes,remember to turn the chicken at least once and add a bit of water if the chicken seems too dry.
